Once in Australia, there is one thing that all Latin Americans want to know: What is the typical food of this country? It is not always easy to know it, as Australia is a multicultural country, with a large cuisine variety.

For that reason, Gringo Magazine went to South Bank´s Regional Flavors, a food and lifestyle event hold in South Bank Parklands – Brisbane – on 19th and 20th of July, and checked out what’s up on Australian cuisine. It was a wonderful sunny winter days, with many stands from more than 100 of the best chefs and industry experts of Queensland, providing quality food and memorable moments for the visitors.

“It was family friendly without creating an atmosphere which excluded those who were not in a family unit”, said Lauren O´Connor, who was enjoying the event with her boyfriend. She also said she could have stayed there until 10 pm, which would be a considerable suggestion for the next year, when she definely going to participate again.

Ingredients

2 cups of self raising flour sifted

1/3 cup brown sugar

100g walnuts, chopped finely

1 tsp bi-carb soda

2 eggs

1 cup milk

300g ricotta

2 ripe bananas mashed

3 tsp cinnamon

Honey to drizzle

Method Preheat your oven to 180°C Grease and line a 21cm x 9cm loaf tin Combine flour, bi-carb, walnuts and sugar in a large bowl Mix eggs, milk and banana in another bowl. Make a well in the centre of the dry ingredients and slowly add the wet ingredients while mixing. Combine all ingredients well. Spoon the mixture into the loaf tin and place in the oven. Bake for 50 minutes. Allow the bread to cool and then slice it into 2cm thick slices and toast until golden. Combine ricotta and cinnamon in a bowl. Spoon the mixture onto the bread, drizzle with honey and serve.
